GINATAANG SANTOL (SINANTOLAN)

 


Sinantolan or ginataang santol is a Filipino dish wherein minced cotton fruit (also known as santol) is cooked in coconut cream. 

Isa sa mga paboritong ulam nang mga Pilipino ay mga lutuing may gata ng niyog lalo na sa bayan ng Bicol at Quezon. Isa sa mga ulam na ito ay ang ginataang santol o sinantolan. Ibabahagi namin ang proseso kung paano gumawa ng isang masarap na sinantolan upang ma-experience ninyo ang isa sa pagkaing Quezon.

Bago tayo magsimulang magluto ay siguruhin munang malinis ang binalatang santol at naalis na ang mga buto nito. Kailangan nating tadtarin ang santol o gilingin kung maari para maging mas maliliit. matapos gilingin ang santol at kailangang alisin ang katas nito. Maaaring gumamit ng malinis na cheesecloth o katsa. Ginagawa ito upang maalis ang maasim at mapaklang lasa ng santol at upang mas lalong maabsorb ng santol ang lassa ng gata ng niyog.


Madalas na hinahaluan ng giniling na karne ito ngunit para sa mga naghahanap ng budget friendly na ulam ang ilalahok natin ay bintak (tampalin ) o alamang at sili.

Mga Sangkap:

  • 4 pirasong binalatang santol
  • 1/8 kl alamang
  • 3 tasa gata ng niyog
  • 5 piraso ng pulang sili hiniwa ng sliced
  • 1 piraso ng sibuyas hiniwa ng maliliit
  • 3 piraso ng bawang hiniwa ng maliliit
  • 3 kutsara ng mantika
  • 1 kutsarita ng suka


Mga Dapat Gawin:

Balatan at alisin ang buto ng santol. Gilingin ang santol sa maliliit.

Ilagay ang giniling na santol sa malinis na tela o katsa upang maalis ang katas. Siguruhing napiga ito ng mabuti at itabi.

Initin ang mantika sa kawali. Igisa ang bawang at sibuyas.

Ilagay ang bintak kapag luto na ang sibuyas. Haluin hanggang sa maluto ng tuluyan ang bintak.

Idagdag ang pinigang santol. Hayaang maluto sa loob ng 3-5 minuto.

Ibuhos ang gata ng niyog sa kawali. Haluin at hayaang kumulo. Takpan ang kawali at hayaang maluto sa mababang apoy hanggang sa maging kalahati nalang ang inilagay na gata.

Idagdag ang alamang at hiniwang sili sa lutuin at haluin. Hintaying maluto hanggang sa makati o mag-evaporate ng tuluyan ang gata.

Ilagay sa plato.
